I have a yummy quick recipe for you but first I have to share a comment with you. You might remember (or not) that Joanna (my sweet 100th follower) said I had free reign in dish towel creation for her. :) She saw her new dish towel in the last post and this is what she said. . .
“Bev: The towel is beautiful. Let me tell you something funny. The switchplate for the ceiling light for the kitchen is an apple! There must be some kind of soulmate thing going on. You make beautiful things.”
Now – aside from her sweet compliment, which is awesome, how great is it that I’m sending her an apple dish towel??? Don’t you love it when things like that happen, completely by accident. Too fun.
Ok, now on to cooking yumminess.
We have teenager craziness going on this time of year – school finishing, projects due, somebody always has to be somewhere. (I have occasionally considered keeping a pillow in the car for quick naps during events. Tell me I’m not the only one??? :)
So on weeknights, quick dinners come in really handy. That way we can still all eat together, if possible, but it’s nice if we can throw dinner together in 15 minutes. If you’re in the same boat, I’ve got a great recipe for you.
Pastrami Wraps
I don’t have more pictures of the process – sorry about that. But it’s easy peasy.
It’s a recipe from a local cooking show, “Sam the Cooking Guy“. He’s really funny and has great tasting recipes without being overcomplicated.
Here’s the recipe (reprinted with their permission, cause I’m a freak about that stuff :) –
Ingredients
- 1 pound pastrami, thinly sliced
- 6 large flour wraps or tortillas
- 2 1/2 cups cole slaw, premade – the kind with the carrot, etc.
- 1 1/2 tablespoons adobo sauce (from a can of chipotle chilis)
- 12 thin slices Muenster cheese
Steps
- Mix cole slaw and adobo sauce, set aside
- Heat non-stick pan and add pastrami – the goal is to lightly grill it to bring out the flavor
- I like to try to grill a couple of wraps worth of pastrami at a time so I can melt cheese individually
- Once grilled, add 2 slices of cheese to each pile
- Warm wraps in non-stick pan slightly and add pastrami/cheese
- Place some cole slaw on top, and roll up – or should I say wrap up?
We’ve made some alterations to the recipe just a bit –
- I don’t buy premade coleslaw. I either buy the bagged coleslaw that’s in the lettuce section or I make my own, then add coleslaw dressing to it. That way we don’t have a ton of coleslaw lying around that has dressing already on. We can make it up as we need it.
- We put the adobo sauce in the first time, but after that we didn’t do it – it tasted just as good without.
- We are big cheese eaters. (That sounds odd.) But we are – so we double up on the cheese and add cheese above and below the hot pastrami.
- 1 lb of pastrami usually makes 4 wraps for us – maybe we’re piggy, I don’t know. I guess it would depend on how much meat you want in there.
I promise these only take around 15 minutes and you have a quick, tasty meal that even has some vegetables in it, if you can count cabbage as a vegetable.

(These are also good with Roast Beef or Ham. I’m also thinking if I had some pulled pork leftover some night, that would be mighty tasty too.)

They look delicioius and sound totally yummie…excpet for the coleslaw :) If you are not a coleslaw eater do you think there is something that can be substituted for that that’s not just plain lettuce?

I think a salad would be good, but I’ve also read that some people like French dressing instead of traditional coleslaw dressing. That would be yummy too – it would taste kind of like a Reuben. Or – if you wanted to go all-out Rueben – you could substitute sauerkraut! YUM.
