I have such a yummy pasta salad for you today! This easy pasta salad recipe is perfect for all your summer get togethers! You can make it up several hours (or even a day) a head of time and not have a last minute rush for your party or picnic.
The salad has lots of yummy veggies to freshen things up! It does have a little mayo and some garlic oil, but not tons, so the salad isn’t too heavy or oily.
It goes together super fast too!

Easy Italian Pasta and Veggie Salad Recipe

Ingredients
- 8oz Cavatappi Pasta (Can use macaroni or other similar sized pasta)
- 3 Roma Tomatoes (chopped)
- 1 can Black Olives
- 1 can Artichoke Hearts (Marinated)
- 1/3 cup Mayonnaise
- 1/8 cup Garlic Olive Oil
- 1/2 teaspoon Dried Italian Seasoning
- 1/2 teaspoon Dried Dill
- 3 tablespoons Basil (thinly chopped)
- Salt and Pepper to taste
Directions
Cook pasta according to direction on box. (Make sure you salt the water!) Let pasta cool. | |
While pasta is cooling, chop tomatoes and artichokes if you need to. Chop Basil. | |
Combine all ingredients in large mixing bowl. | |
Refrigerate until time to serve. You can eat this and it's super yummy after a half hour or so - but if you make it several hours ahead, the pasta really picks up the flavor of the garlic oil even better. |
